Maserati has always been Red, where Ferrari red are their race colours due to it being the national racing colour. Yellow is is the colour for Modena in Italy, which is the home of Ferrari. Which would probably make yellow the traditional colour for Ferrari.

Most likely I'm looking at this in a different way. In terms of what looks better, red as a colour on most cars looks better than yellow along with most people associate them with their racing colours, hence why you see them more in red because it looks better for most people. But in terms of traditional colour for heritage, yellow is one of the traditional colours for Ferrari which is more the way I'm looking at it.
