Oil level in my engine keeps going up and down!

Sounds like you don't know how to read a dipstick.

If you're concerned, next oil change have it analyzed by Blackstone Labs. They can send you a kit.

The oil level is where it should be according to the 3rd party dipstick, and vacuum draining the engine before refilling.

It was reduced below the recommended value, and the issue still comes up.

Car was given by a dumb fuck parent because "It's a Mercedes!"

German Cars are garbage, but it's got new brakes/tires/fluids. Only issue is the engine oil level is haywire (Not including the gorillion electronic and poor quality shit)

Think about this for a second.
The head gasket has been having problems. The head gasket seals off the cylinders and the coolant channels. It does not seal or handle gasoline. That would be the piston rings.

If you are pretty damn certain you have gas in the oil, that would be piston rings. If you aren't sure, it could be coolant as well.

By chance did you deck the piston head and block when you replaced the gasket, or did you just unbolt the head and put a new gasket in?

Didn't notice anything on piston rings head or block, but I only really examined the rings.

I'll check again.

2) coolant levels are good, and it didn't seem like it's leaking. That was the first suspicion, that's what I really looked at when I had this issue. When I couldn't find anything wrong, I concluded that the sensor was fucked, and replaced it with a new sensor. Problem wasn't solved.

You need to know what's getting into the oil, whether it be coolant or fuel.

That's step #1 in diagnosis.

Shame you don't have an actual dipstick so you can confirm the oil level. Germans for you. Take a sample of the oil and send it off for analysis, if nothing comes back you've probably got a shitty sensor.

It could be either, does your oil smell of fuel? Have you checked your plugs? It is relatively normal for oil levels to fluctuate to a certain extent.

If I was you I would check my plugs, if they are okay do a compression test and if that's okay I would check my injectors or like I said get an oil analysis and check for any trouble codes through the OBD.
