Yeah, I like nice and goofy (or at least flawed-yet-redeemable) Gaster interpretations over the more evil versions in fanworks.

It'd help if many of the evil ones weren't so ridiculously edgy at times. I followed Handplates for a while as well, but things progressed so slowly I just couldn't keep going with it.

Definitely.
A simple motivation like "FOR SCIENCE!" *can* work, but feels a little bland for a game in which (nearly) all the antagonists have reasons for their actions and have 'humanity' in some way.

Now do I think Toriel forever hates Asgore and banishes him from any room she happens to be in? Of course not. The credits show him working at her school, which the extreme interpretations of Toriel would never permit. So it's clear they can be civil in public and work together, and I think that can lead to a cordial relationship, perhaps even friends. I just have trouble seeing romance happen. Although I'd like to, one day when they've worked through their grief, which has pretty much festered for decades and is why they made the decisions that tore them apart.

I'd say that's a sign of good or at least accidentally good writing, where a character's complex enough that you're not really sure how to feel about them

Messed up kid, could not react healthily to positive emotion. Manipulative as a control/self defence mechanism. Did want to free monsters, but it was about revenge on humans first, and unlikely would have stopped at six. Had they lived, they might have embraced an attitude like Genocide. What they are after death depends on Frisk.

Oh. Well Caretaker aint no dindu that's for sure. Even though it looks like they really want the monsters to be free they are ruthless af about it. That kiddo ain't right.

Chara is the protagonist of Caretaker, so it makes sense that at least his personality is fleshed out.

He also gets the best facial expressions.

Well 'evil monsters' aren't random, they had to be victims of something to fall in to their personality, and subsequent choices. In that way, everyone is both guilty and deserving of sympathy
