Flamberge is pretty unremarkable as far as greatswords go. Bastard sword R2 is a lot worse than claymore poke.
Nerfed rouge only adds 20 buildup so you won't proc it with that speed anyway.
Corvian Scythe's R1s have the most range out of all of them. Staggered R1 will be your bread and butter on it, because other attacks are pretty bad in comparison.

The sharp buff makes flamberge basically the strongest greatsword, since it is equal to the claymore but also has bleed.
BUT
The only way to proc bleed is to use it at very low levels, where the sharp buff almost doesn't matter anymore.
So the best way to use flamberge either Raw or Sharp on really low levels (like 16/16 SL25+2) with rouge.
At that point, it has a roughly a 5% damage advantage over claymore, but also with bleed damage.
When you get to higher levels though, flamberge's usefulness drop off and it just becomes a slightly stronger but significantly harder to farm greatsword, since the bleed becomes useless.

Straigth Swords are pretty much broken for both PVP and PVE. A lot of people make the mistake of spamming R1 in PVP, which will work against retards, but against a decent player, you'll generally want to hit twice, then heavy or just roll away. Though in PVE you can just spam r1 to win. With the Lothric Knight Sword and the Long Sword being the best. Plus they're amazing for roll catching.
For just PVE though, most Greatswords are top tier. I'd suggest the Flamberge or the Claymore. Vordt's hammer is also god tier. As the weapon art staggers bosses if you're in their face. I play a Debuff build though, which is brokenly overpowered for PVE. Storyteller's Staff and Dohrys Gnawing or however you spell it. Literally just Poison, then spam bleed bombs. Which shreds all bosses.
For PVP only, the best weapons are generally the weapons you feel the most comfortable, but as always, there will be exceptions. Most Straight Swords are crazy good. But again, LKS and LS are best. With great damage, range, speed and weapon arts. One for Hyper Armoring through attacks and dealing huge damage. And the other for INSTANT shield destroying. Greatswords with Straightsword Stance are also amazing (claymore and flamberge). Spears are also pretty good since the range just allows you to stay at a distance if you're good.

Other than that, do you like spells? A faith or pyromancy build is great fun for PVE and Co-op. And faith even got a buff recently, and the new spells are god tier. If you get 12 int and 25 Faith, you can shred practically all bosses with Storyteller's Staff weapon art (stronger than regular poisons by about 3x more damage, almost making it as deadly as toxic). And Dorhy's Gnawing, which got a buff a couple patches ago to make it faster. These two will carry you through early game easy as fuck. And when you get to end game and DLC's, you'll have access to one of the greatest miracles. Lightning Arrow, which is almost unpunishable.

You could try Onyx Blade as well. Almost noting has Dark Defense. It's probably one of my favorite looking Greatswords. Has the Claymore moveset, but is the longest greatsword. And it's weapon art is a buff, which adds even more pure dark damage. And if you level int and faith together, if you find something that has dark defense, you could just infuse a weapon with chaos. Which will help, since that also scales with int and faith.
My pyro has zero spells and instead relies primarily on this weapon. It's fucking hilarious being a Pyro but as melee.

I really don't mind dying but people are killing me pretty easily and its actually quite embarrassing to not be able to put up a fight.
Right now I am level 112 and I typically use yhorms great machete or millwood battle axe. My stats right now are like 66 strength, 20 end, 20 vit, 20 vigor and 22 faith I think and like 13 dex. Roughly.
Anyway, is yhorms great machete even a good weapon? I feel like when I get a solid hit, its still just not enough because I can't follow up because people can roll out of the hit.
I also don't know how to chase people down and apply pressure so they can't heal when they run away. What are some general pvp tips that will help a person who typically PvE's defend himself from invaders? Again, I don't mind dying to them but I hate being a push over.

Roughly. Stats are just there to support your strategy/build. Learn to use the weapon you're using first, then worry about optimizing stats for it.

Your best bet is to actually try to kill them in a way where they can't or won't heal. A classic tactic is to chip their health down to halfway, so that they don't quite use an estus flask, then do 2-hits of a very powerful weapon to bring them down to 0 health. Or you could pressure them (invaders have half the number of estus you do) into drinking all their estus by trading damage, so that you have an advantage.

There's no gimmick to beat them, you have to deliberately wait for them to make a mistake, and then exploit it. In the case of DS3, there are very few mistakes that can be exploited because of how the game is more in favor of casual players, so most battle are just wars of attrition.
You generally do however want to focus all of your levels and build around a single few set of strategies and practice them until they work.
