I don't see a world where quick riposte is bad on a normie unit with no fucky skills. Lancina is simply a very respectable lance with great buff potential. Think of it like putting a QR on an Eirika. It might be more useful on other units, but it can't be bad.

So I'm sitting here leveling up my subaki to get him ready to pass on QR to something else and I actually start to grow quite fond of him and start having second thoughts about his imminent demise. Has this happened to anyone else?

They can be but they take a shit ton of investment and in the end you find out it wasn't really worth it.

QR is good for very high attack units that have rather low speed but good bulk, or a way to counter both melee and range.
As for Brave Lucina with QR, she probably can get better, like Desperation, a Breaker or even Renewal, but QR is never truly a bad skill.

You want him to get doubled all the time. It procs Steady Breath twice which instantly charges Aether. He doesn't even need speed to avoid rare quads, since he can't even die to them (ranged quads get all their damaged absorbed by Urvan, and melee quads never happen since Ike one shots with Aether during his counter before that has a chance to happen). Getting +spd also means he's -atk, -HP, -def or -res which are all stats that are good for him.

I'm just using QP because I'm running Chain Challenges over and over for SP. It means he always gets first turn Galeforce even with Desperation up. I wouldn't use that in non-consecutive maps though.

enemy sprites are always flipped over. All characters face right when on your team, so in that image both of them will be right handed when on your team. Same with the art that appears while attacking someone.

Still building SP on her C skill but I absolutely love QR on lucina. It's better than both breaker skills imo.

Ike has good speed in POR, and yet two incarnations of him are slow. There are plenty of units like Chrom and Florina and Camilla who arbitrarily have stats that don't reflect their spreads in their own games to keep units from getting too samey or being too good.
