Each servant can have 990 points added to their HP and Attack stats. Fous add 10, 20, or 50, depending on their star levels. Most are a specific class, but some are every class. Servants like Jeanne need the every class ones.

Increase HP and attack by up to 990 points. Some fous are restricted to a certain class and can only be used on said class, and some are universal and can be used on any class.
Assuming everything goes well, we'll eventually get 4* fous which can further increase your HP and attack points up to 2000 or something.

However, stuff still gets recording into Akasha and the Throne. Go to the enhance menu, pick your servant, then select the Fou the same way you would an exp card. Keep in mind that fou's are linked to certain classes, so you can only use a Saber fou on a Saber. There are universal fou's you can give to anyone though.
