Take their shields down, then target the heart. After the last heart is the only one they'll stop regenerating. You can hurt the heart with normal guns.

Ok, but when I blow up some dad, does anything get applied to my character? Logic would say no. I get that the ship is flagged as hot and now additionally that it has engaged in piracy, but my character is a seperate entity from the ship its flying.

It will probably work by areas. You steal a ship in secured space, all secured systems knows you are a thief immediately (the ship is marked as being of player x but you are not him and you are flying it without permission). Npc's, station turrets will give chase/fire upon you. In more chaotic/lawless systems/areas nobody gives a fuck.
The question is: if the ship is stolen can you sell it afterwards or is it "hot" and traders wont buy them? Can you disassemble it and sell the parts/cargo? probably. The victim is reimbursed according to insurance. Lawless characters might not have such privilege.
There will be some sort of keypad locking too.

You could also explore or race. And nothing says you can't solo salvage, there just won't be a ship dedicated to it since you are going to do most of your "salvaging" EVA or planetside.

From Q&A answered: If you steal the ship of someone and he declare it stolen, he won't be bothered by any system who get the information (note: the information don't travel into jumppoint by itself, which push data-runner on a whole different level)
You (in the stolen ship) will be attacked for being in a stolen ship in any system who care (AND received the info, no FTL comm again) But your character itself should (in theory) not be considered a criminal unless some game-mechanic (like a scanner? or black-box data) manage to prove that you are the one who stole it.
The game will know what you dit, but CR/CIG do intend to let you play with which star system know which plane know player X is a criminal. Technically this is pretty simple to do, just have the data update slowly. What will require a lot of finesse is to make sure it allow a gameplay around stealing ship and fleeing where nobody know you (yet)

that's not what I got from small/solo salvage ship have been discussed ad nauseam because we already have them. Any ship with a cargo-hold and tools to cut of part of a ship will do the jobs. It wouldn't be interesting to have a ship that convert wreck into spare part automatically. This is not like a mining ship which only have to separate basic ores.

Sure if you build the game around the mechanic, but this is an MMO with a ton of conflicting systems and mechanics. A massive jack of all trades master of none, there are going to be sacrifices whether Chris Roberts wants them or not. They have a financial ceiling that is probably closer to them than they're comfortable with so shit is going to get cut down to ensure gameplay is out faster so if you steal a ship you're going to be labelled a criminal with little effort in the beginning maybe later they'll come up with some fine tuning way of stealth theft which will be dropped because players are already comfortable with mechanics in the game and wont want to be upsetted.

Not really, that's just a literal black box, if you recover it, the game will stop pretending it don't know whose ship destroyed yours. Who own that ship and wether it have been stolen is just a binary yes/no variable stored in a table. The game will know you stole the ship because you'll be forced to run an hacking mechanic yourself, that's when the change of ownership could happen.
Then with each star system getting separate table, just put a slow update if X container come with the data in it. That's stuff you can program on Excel.
Next, as you've seen on screenshot, some starport have scanner. If you land in a stolen ship AND go by the scanner; the link "you = stolen ship" is done immediately. So I believe CIG will add outlaw access to starport so instead of being scanned, you have to bribe someone to not care, or enter by a destroyed fence.
And ship with very good sensor will probably be able to scan the real user aboard if you let them get close.
You can get all that from following the AtV and various data CIG give about what they are working toward (it can always change, that's how game design is)

Honestly, I would prefer them to not allow change ownership of the ship at all (forcing the thief to dismantle it) and not implement the hacking mechanic to the locks, but keep it with no waiting time after x failed attempts so the player can "in fact" hack it using third party scripts.
