Did you guys really not have fun while leveling? Im leveling my warlock to 60, and when i do, im going to level a paladin.
Sure, raids sound fun, but its not the end of the world. Im enjoying the leveling journey

I'm not really sure what I'm meant to be finding fun about leveling, the monsters don't have interesting mechanics like raid bosses do, the quests aren't really much more complex than kill x, loot y. its honestly just a means to an end and it seems like the devs thought that way aswell. just my opinion.

Figuring quests out, learning about Warcraft lore, travelling, visiting areas and remembering old memories, making friends along the way, getting green gear by random mobs that is better than your equipment, going by foot, the satisfaction of delivering quests and finishing chains... Vanilla is hard. You need help, the interaction between the players in the server is great, just like vanilla (at least horde side).
I see a lot of people suggesting to grind. Of course there is no fun in that, imo.
Wow is a mmrpg, and i play it as so. If you play the game with the mentality of getting to 60 as fast as possible just to raid... what about the week or two that you spend leveling your char? Maybe its your 10th character that you have leveled to 60. But then again, ive been playing this game since the day that it came out in Eu, and im still playing it.

I think your mistake might be empathy, some people find grinding more fun than quests, some people find raiding more fun than leveling, there's nothing wrong either.

And how tough is that for a holy paladin?
I'm looking what all I'd need now and the consumables make sense (but need to farm gold to maintain) but getting all the world buffs seems like a step more than necessary.

You are right, some people may not find fun in leveling, and they just want to raid with their guild. Thats understandable.
But i dont agree with "vainilla is not that hard". I mean, sure, its not a hard game. What i mean with hard is that its challenging. Retail wow does everything you need for you. "Oh, here are the quests. Oh here are the objectives. You dont have to travell that far". Etc.
You can level in retail in "stand by" mode. You can mindlessly level like a sheep. I may be exagerating, but compared to finding quest givers, what they want, and where to go, is just a "hardish" enough task. Its simple in mechanics, but hard in the sense that you have to work your ass off to figure out things. Just like you speak to npcs twice in rpgs, when you take a quest in wow, you have to talk to them again to gain some valuable (sometimes) information.
If you want to do a dungeon, you have to go there,... you will need help, and the players will do help you. The game doesnt take you by the hand, you have to rely upon others to advance easily. Or faster.

I'm not sure how well the cooling pads you can buy work, but you could try that.

I honestly think any conversation about what facilitates a hard game is very obnoxious.
Really what you need to ask yourself is what is hard?
A lack of foreknowledge? A lack of experience? A lack of skill?
For some games you only need 1 of the three to play them "well", minecraft "vanilla" didn't tell the players dick, old people and adults find it hard to play, children do not. It's not because the game requires skill, it's because the game leans heavily on players experimenting to find out how to build shit, a game that requires you to figure it out because you've been told nothing is honestly probably the shallowest concept of difficulty imaginable. Also yes dungeons are hard solo because they've been designed that way, you can play any rpg you want go to a place you aren't meant to and you will find it hard, that doesn't make the game hard. that's a self inflicted handicap you've set yourself against the developers wishes.

how old is your laptop? You can get a new laptop, or even a shitty desktop, for cheap and they would be able to run WoW just fine.
