I heard that the games were basically like Street Fighter in that they're very grounded despite the anime aesthetics.
But apparently the original vanilla game was completely unbalanced so that only 2-3 characters were S-tier while the others were like B or C tier. Is this true? If so, does UNIST fix this?

Vanilla UNIB had nigh infinite combos and was unplayable shit. They fixed that in UNIEL, the last edition, and UNIST is the current one.
UNI's mechanics are a crossbreed of airdash fighters and more traditional ones like SF/KOF. Most grounded normals are air unblockable and airdashes aren't the regular kind; they're called Assaults, and an Assault launches you forward either from a jump or from the ground. Only Seth has the ability to airdash backward, and a few characters have double-jumps, but for the most part characters can jump and Assault, or Assault. Assaults make you unable to block anything at all until you land, you can only attack. All this combines to make anti-airing more reliable than it is in games like Blazblue, which changes the feel a lot. You can airblock projectiles though, and ground Assaults give you an IAD-like function that makes projectiles less dominant.
UNI is also a game full of very far-reaching normals and specials. It's kind of the opposite of SFV in that rather than everything seeming stubby, everything seems to reach way too far; there's very little safe space on the screen in most matches.
It does still have a magic system for combos where you cancel one button into another and combos are fairly long, and there is a rapid-cancel ability that eats your Vorpal state. Look up a wiki about the grid grind system. It also has a BB-esque design philosophy where every character is supposed to feel really unique.
I love it personally. It's most of the stuff I like about anime games combined with most of the stuff I like about SF.
