True. To some, Generations with playable characters is it. To others, Adventure-style Sonic is it. To others, Mania with all original stages & more playable characters is it.

Yes. But so far, we've seen 2 new stages & 3 old/mixed stages

None of them are really returning stages, though.
They're just visually similar "remixes" of familiar stages.
This isn't like Mania where they literally reused entire stages.

I don't think there will be that many to be honest. There will most likely be a majority new stages.
Yes. I would be extremely upset. It wouldn't be so bad if the game were just Buddy and Modern Sonic. It would be cool to see playable 3D versions of past stages, especially the classic titles. But since we have to slog through them as Classic Sonic too, it's a chore. I can't speak for Forces since I haven't played the demo, but the Classic Sonic versions of Green Hill, Chemical Plant, etc. in Generations weren't fun because of the physics and all they did was make me wish I was actually playing the classics or playing as Modern Sonic.
If the drawfag doesn't deliver then I might as well do this.

Yes there are. The one I normally go for is at the bottom of the series of ramps that you go up on, with the bomb throwers on every side and the lightning rod going up the middle. Pop the shield and ride the lightning rod to the top.
