Well if you're whaling in FGO is not for the gameplay so she must be cute or something like that

She doesn't need much, a regular light grid with the longdong katana is already the most damaging light grid in the game and she can keep the buff of it up by all by herself. Things like changing her anti-dark skills and passives to global ones and putting a team frontwater effect on her second skill would help her a lot.

Right she and the katana aren't used because it requires clicks and no one wants to waste a gold bar on a character that doesn't bring much except heals and allowing you to use a gimmick weapon.

Is there any element that can deal with elemental resist content easily?

She gets "worse" because Merlin releases and for a solid amount of time the easiest way to clear shit was unga bunga Buster teams with Merlin. She didn't actually change, but the people that make FGO tier lists are about as competent as the people that make GBF tier lists. From a gameplay perspective, she's fine and iirc remains one of the best Sabers. It's a single-player game anyway, it's not like you're racing for MVPs.

From a character perspective she's not my personal pick if I had to choose a 5* but I can definitely see why people like her. She's cute and the GUDAGUDA event was pretty endearing.

No. Dark with Zoi clears a lot of stuff, so does Chev Sword Light, but you do need a grid for EVERY element for later content. If you are a beginner only clearing Magna, normal Baha and Zoi, plus events and story mode, any element will do.

The Solomon temple was literally that, kinda the same with last summer's event even if unlike the Solomon temple, everyone got the same rewards.

I've had Okita since like her second rate-up, she was never really that great. Her main draw is being able to field a saber in a quick-meme team, which has and had limited versatility even before Merlin was released. Her main problem is her overall low NP damage and her crit up skill being tied to her dodge. But like you say end game content has like one team and it's always optional.
