And as for the relevant Horde races, we're literally going to Zandalar, that's half the expansion right now. I don't know that doesn't make Trolls relevant. Plus they've confirmed they'll do some Vol'Jin plot stuff too. And Goblins are doing stuff with Azurite, which admittedly is less interesting.

How easy is it to gear alts now? Or to get ap for offspecs?

Currently, hunters are pretty middle of the road. They're really simple though and bring an immunity to the raid, which is why they're still pretty decent as a part of your comp.

Balance is doing really well right now, probably the best its been this expac, though I think they still have problems legendaries being more important than other specs.

Mage is doing great, and one spec out of the three will always be doing well regardless.

They're viable, but the only "wanted" classes are ones with immunities or capable of doing soaks (rogues, mages, hunters). Everything else is down to skill

Look up the Mythic + system. It's a scaling dungeon format with various modifiers and special dungeon mechanics. Yeah Demon Hunters are fine, like the other person said. The only qualm is that they're melee and there's always too many melee. Having Bloodlust // Battle Rez are two of the most desirable abilities someone can bring to a M+ dungeon.
BM Hunters are the only class spec that can have both, but some people don't find BM Hunter very fun.
Balance has come a long way, and if you're just coming back, chances are that you REALLY won't be doing any content at a level where it REALLY matters what class you pick, every spec can do everything, including Mythic raiding. It's only high end progression mythic raiding where you really need to start caring about what class/spec you play. Not that your average player ingame would admit it.

9/10 people who claim they've done content in WoW are lying. I remember when this feature first came out and people were getting absolutely anally devastated when they were getting called out. I think people just want to believe that they COULD be awesome at the game if they wanted to.
