Im on a road to 60 server. I'm level 40. My quests are level 32 and my gear is fucking level 28.
is this going to make me the squishiest tank in the world, what should I do? Should I start grinding guild gear? or Paladin quest gear?

You only need gear for the dungeons. Just keep your weapon and chest piece as up to date as you can, get them from vendors or the market board if you have to.
Gear level doesnt matter until you hit 50 anwyays, but yeah. If you can stay within 10 items levels of the level of your current story quest period until 49, youre fine. Your accessories will always drag you down anyways.
Make sure you do your pld quests every 5 levels, 30, 35, etc. You'll be fine

Trials roulette should be near-instant on tank or healer, and usually isn't terrible on DPS jobs. 50/60 usually takes a while, even on tanks.
Any reason why you can't buy some crap from the vendors in the major cities? The vendor stuff isn't as good as dungeon gear of an equal level, but it'll do for filling in gaps while you're leveling.

whatever you feel is most useful when you're in a dungeon. the higher levels aren't necessarily as useful. Rampart's probably the most useful to me.

Your best bet would be to look up the mats that are required for current-tier food/pots and mats used to make later crafting equipment.
