You could parent one mesh to another mesh in unity but you can't cut up only certain parts of a mesh and it's better for performance to have only one full mesh (muh drawcalls) so do it in blender.

Try looking into how the blink shapekey works. If you have to you can edit it so the eye mesh moves backwards into the eye when you blink.

I don't have any problem with them, but they're mostly pretty boring. If they have VR and interact physically, gesture, etc. then I often quite like them. Especially if they make custom avatars as well.

As an alternative to eye tracking since I've noticed it looking at the wrong people often but I only see a handful set up this way, just curious what other people like.

You can always mute yourself. Plus figuring out how to convey things with gestures and whatnot is pretty fun. Using visemes for facial expressions helps a lot. Watch videos of Jimi or something and you might get some inspiration.
