easier to make and more identifiable as a mod added armor, some of the ground models are just the static/flattened armor models which look awkward when you find them in the leveled lists or as loot in bandit camps/dungeons

Probably to make them identifiable against vanilla armors, since many of them are so similar to vanilla armors. If they had vanilla style ground models, they'd be difficult to distinguish. You have to remember the ground models are also used in the inventory.

How difficult would it be for me to to make something 90% text based? Just a few text prompts and choices based on the PC and the enviroment?

It'd be nice if the days of the week in TES mattered. Like there were weekends, where you would see NPCs going to the square and chatting, or playing some kind of game with friends.
Or if the in game months were seasonal, affecting the weather and the types of wildlife/monsters that can be found in certain areas. Bears disappearing from the forests during winter, replaced with ice wraiths, trolls, and wolves. NPCs being more likely to be found at the local tavern, gathered tight around the fire. Small world-buildings elements like that can really pull a game like TES together.

Generals like that are usually community circlejerks that are barely about the game, aside from posting fanart and such. I mean, this one isn't much better, but at least we've got the constant influx of mods and the ability to make different characters.
Oblivion actually had weekly schedules for characters. They would do different things on different days. Skyrim is downgraded in terms of NPC scheduling, though, so I don't know if any of its NPCs have weekly schedules.

Is modding Morrowind as much of a nightmare as modding Skyrim?
I used to play Skyrim with mods and it was always like a job trying to fix random crashes. It can be a nightmare trying to get two small, seemingly completely unrelated mods to not conflict in a way to make the game unplayable.
That said, I'm about 200 hours into (vanilla + official addons) Morrowind and it has crashed a grand total of one time. Unlike Skyrim, which even without a single mod would crash on me more often than it should. Is it worth trying to add some mods? Is modding generally easier/less frustrating or do you run into the same problems with crashes? I'm really interested in new land mods, which ALWAYS caused problems with Skyrim, how about Morrowind?

Crashes usually aren't the problem. Just make sure to check your warnings.txt Almost every problem can be fixed, you just might not stumble upon said fix until years later.

I've read that Bethesda discourages modders from using resources from other games (for example, directly importing models/textures/meshes from Oblivion into Skyrim) and I've never seen any such mods on places like Nexus. Is there a good resource for mods that aren't "accepted" by the community (aside from sex mods)? It seems like an obvious thing for variety purposes (why make all new weapons or characters or creatures when you can take them from previous games)
