Shadow's spent his (sexually) formative years either in an incubator pod or as a little girl's pet hedgehog. Regardless Shadow had no actual parents and what he'd likely considered to be his family wasn't even the same species as him. In his adult life, Shadow tends to act angsty and mature and independent but it's clear as day he's actually the smollest bean. He likely prefers to eat the coffee beans raw because that's how Maria fed them to him or whatever.
Based on all that, I'd say Shadow's ideal partner would be either a robot or a little girl pet owner/mommy wife. He'd also obsessively push her to become too powerful to die of bullets.
