Might be you or your tastes? I mean there's always been shit or sub-par games. All throughout the ps2 era all I ever owned were certain types of games despite a good amount of good/highly acclaimed games being released in that generation that I never really cared for. Based on quotes and banter/dialog in general that characters have said one would think that a bunch of the characters hate a bunch of others for no reason. Hell, Kyo is no stranger to throwing shade and neither is someone like Terry for example. Most have thrown shade/banter at each other at one time or another.
In Shun's case it's still not out of hate for Kyo. Shun has had to always hold back because he feared he would hurt others and as the other user said Tung stated that Kyo is one of the few of those he could go all out with. Tung even asks Kyo (through Saisyu) to "show them the way" so it's not like Kyo doesn't know it's coming.
When Tung Mentions KoF Shun even worried that he might heurt people and tells him "Don't underestimate first-class martial artists, foolish boy. You probably couldn't even hurt them at your current level." and specifically name drops Kyo and some of the Kusanagi exploits basically giving him a goal to go for.
Shun is just some kid with freaky devil powers that doesn't want to hurt anyone.

I think Shun's interest in Kyo isn't similar to Iori's. Shun is very young and still doesn't know the limits of his power, so he is eager to fight Kyo since they said he will not need to hold onto him. But I imagine he will also be surprised to fight other strong opponents.
Now for Iori, he himself says that what he feels for Kyo is not related to his family, it's personal. The exact reason why he is so obsessed with Kyo is a mystery. But he doesn't have pleasure in fighting other people, or testing his forces against other opponents, it needs to be Kyo.

Taekwondo doesn't really have different styles. Schools usually belong to either the International Taekwondo Federation or the World Taekwondo Federation. That's the kind of thing that happens organically over time. Trust me, their thought process won't even need to fo past "wow this fucking scrub" for a while.
That's... encouragement, btw. In KoF you kinda learn all the characters at the same time, once the game "clicks" it's just a matter of memorizing what input makes which special come out. As you start getting good, you'll begin finding out the best spot for each character and you may or may not agree with their conventional placement. It's basically a matter of how much you use your meter with each character.

How to Shermie? The A.I. seems to know exactly which moves I'm doing every single time and uses the exact same counters by the time I get to the 3rd or 4th fights. I can't approach, I can't get away, I can't react fast enough. It's like it's reading my inputs as I'm doing them and reacting with the right counter the moment I execute the move. I'm on Switch if that helps. Difficulty 4. Also why do I need to be right in their face to command throw but other characters get to grab me without even being near me. Daimon clearly whiffs his throws and yet he can still grab me out of thin air. Also everyone gets free wakeup and roll throws every time. But I have such a long recovery period before I can do anything while getting up from the floor or from a roll.

Shun'ei has already been established as being arrogant. His only training partners is Meitenkun and Tung. To Shun the strongest person he's faced is Tung who is way out of his prime. Shuns development is getting that arrogance out of his system and realize there's people far above you. His a big fish in a small pond(3 people pond), so KOF will be a good experience for him.

Shun'ei's gimmicks are wielding mysterious (by KOF standards) powers and being physically incapable of restraining his strength. He can't spar like everyone else, which is why Tung and Meitenkun have been the only people around him thus far who tolerate "training" with him on a daily basis. He enters the KOF as part of Team China to introduce an outlet for his unique needs by pitting him against the best fighters in the world. Shun'ei's complex about controlling his strength does come across as arrogance sometimes, since he assumes no one but Meitenkun and Tung can handle him, which is when Tung - like mentions - chides him for not realizing just what he's getting into and that practically everyone in the tournament could reasonably wipe the floor with him.

Is it just me or have there been some people (maybe it's just one person) posting in recent and some past threads that have been >muh FF/FFfans as if FF was some sort of thorn in KoF's foot. I don't get it, why would there be a sentiment like that especially since some things overlap between both series. Another example was a someone in a previous thread claiming that FF fans liked Ryo getting shafted in Destiny or in another occasion someone claimed that Rock was put in XIV because "Oda has a boner for Rock". As a guy that replied to them mentioned Ryo getting shafted was bullshit regardless if it's from a FF, or AoF fan point of view (same universe) as he's been portrayed in FF as a special boss that's a total beast (which was fucking amazing).
I don't get how someone that likes KoF would feel like hat towards FF since KoF started as a crossover between a lot of SNK's series (one reason being so that like Terry and Ryo could fight without fucking with the ages), but gradually became it's own thing what with "hey we have these cool new characters let's add them in" and is one of SNK's more successful series and deservedly so. Now with Shun it feels as if someone can't touch or say something to the KoF protags. I mean those protags have totally never been arrogant or assholes towards other characters whether to KoF original or from other franchises, right? These characters say these things to add flavor to the series. Even Terry has talked shit before.
