I'm trying to run a function of my own to load a save game after opening a level. Google turns up a few hideous hacks involving hardcoded delays etc.

Epic's wiki as a reference is useless. It only mirrors the information already in the engine itself (which is usually decent, though), so if you get lost there, the wiki won't help.
Thankfully, and to be fair, the forums are pretty helpful, and I can usually find what I need, or at least a nudge in the right direction, with a google search.

itch is kind of a dev circlejerk and the dev circlejerkers want to keep it that way, the devlog is tucked away at the bottom of the page and there's no clear way to subscribe to a devlog
itch doesn't seem to care about actual customers being interested in the games

As many as you want to put in. Just remember that each phase is basically a new boss that the player needs to beat in a row.

Typically I'd say 2, but that's only because I like the idea of an enemy going all out when they start to lose.

Is it too much if a boss in a turn-based game first has a phase against a bunch of grunt enemies, then 3 different phases against the boss

I'm fine with multiple phases but I hate it when they reset the health bar. It's unfair to the player because they don't know how many health bar resets there will be and can't plan their resources around it. (atleast the first time)

For example, I used all 5 estus getting through phase 1-2 of Father Ariandel/Sister Friede only for Friede to fuck me in the third phase.

Hmm that's a lot. I'd say one phase with grunt enemies, one phase with its basic kit, and then a final phase with everything it has.

Anything more than that is probably pushing it. If it's too easy then you wasted time on a long boss, and if it's too hard then players will hate dying halfway through.

video devlogs seems like an investment, in time at least. you can use tumblr for more in-depth explanations of what you're doing, if you want, twitter for short, cool video demos, and youtube for longer format teasers or trailers. that's how I see it at least.
