Sometimes I get the impression the IT don't like each other all that much (outside of particular friendship pairs, like Chie/Yukiko), and everyone just revolves around (Yu). I haven't played or watched any of the spinoffs, but prior to those being released, it wouldn't surprise me if the IT stopped meeting as one big group sans Yu after he went back to Tokyo.

I guess that's kind of the downside of being the main character and the confidant/arcana system in general, you often feel like you're the only reason these people haven't tried to kill each other.

And you'd be wrong, and yeah, a lot of the spin-offs completely confirm it. But it was obvious enough in the games, too. Of course they fight, but that's what friends actually do.

Theres only one or two scenes in P4 that don't have the protag standing aloof in the background. The entire game revolves around him, and suffers for it. IT couldn't tie their own shoes without him there to dicksuck them into doing it.

P3 went out of its way to make the MC a minor character until the end of the game.

P5 isnt that much better at that, but at least the party members feel much more individualistic.

It's definitely a case of telling over showing, but the Mementos dialogue does a good job at showing how the PT interact with each other w/o Joker. It also helps that they aren't locked within individual social links like the IT (IE: Ryuji appearing in Anne's and Yusuke's confidants, Makoto appearing in Futaba's).

There actually is something like that already in P4. When you enter a completed dungeon and can find several party members standing around talking to each other. And also the fox.

It's Persona 5, but more like Persona 3, and also Persona 4, but some Persona 5 dashed in. And it all takes place during Episode Aigis. And it's a mobage.

Probably one of my favorite and kind of sad bits of that is a follow-up dialogue to someone mentioning that Yusuke should keep a low profile to like the rest of them. He brings it up and in his usual nonchalant way remarks that nobody talks to him anyway so it's all good, and Ryuji immediately asks if he wants to grab some food later on.

Even if you don't get to see them interact with each other out in the open, a lot of the dialogue is playful enough that you can assume you're not the only reason they see each other.
