Collect hides and kill bandits aren't even side quests (they're activities a.k.a grind filler - still good though especially for bounty hunter rp). Rp more and find them.

There is a big fuckoff star on every innkeeper that will point you to the quests in the area. The game even says in one of the tips that innkeepers know whats up for retards that need more direction.

Go out the gate of skalig or whatever until you reach that little house on the hill. Go straight north of there for a grave.

I did an adventure and followed hanush. He woke up, got dressed, ate, went to church to pray, and then went around town doing random shit until dinner. Then he went to the ale house and I got arrested for not having a torch out while sitting there staring at my phone.

So nevermind lockpicking, its easy enough but pickpocketing is baffling me.
How am I supposed to tell how likely I am to be caught while searching someones pockets.
Ive been caught while the background was green in like the second cycle and I was not caught when the background was red for like 8 cycles.

I struggle to figure out how the intimidation score mechanic works. Here I am in well-worn armor and a sword freskly bloody from wrecking some bandits, and a random peasant still goes "I bet you'd shit yourself if you had to fight anyone lel".

Outcomes yeah, but there are actually different lines in a few. I'd know, I tested it just now with freeing Hans by murdering the Cumans and just sneaking up and cutting his ropes.

No. The kickstarter covered like 10% of the budget. The goals simply werent reasonable. Not the first kickstarter to do this, although I would expect from Vavra and Klima to be better able to estimate what is going to cost what.
