Step #1 to fixing eyetracking bugs is ask a friend it might just be the mirrors.
Next check bone hierarchy and names, even if the eye bones are assigned correctly the muscle rig editor is not what VRChat uses for eye moment limits. VRChat will go looking for exactly LeftEye and RightEye and if they don't exist it will fall even if you have working eye bones with different names assigned to the rig.
VRChat also uses the size and position of the eyebones and their relation to the head bone to determine the rest position and the limits to how far the eyes can track, so your problem might just be non-typical bone sizes - find a model that tracks perfectly and do your best in blender to mimic the exact bone sizes and position for both eyes and head.
Lastly if your eyes are solid white grab a camera in avatar testing and push it into your face, your eyes might be tracking fine but the "pupils" pushed behind the "whites". Move the eye white meshes back or the bones forward to fix.

So can the Kinect accurately do leg trackng? I don't know enough about it to tell the difference between vive trackers and kinect when I was hanging around.

I got a kinect, only way to tell is I can't rotate my feet and I pivot on my head turn. I'm the robo meido if you want to look at it

Shit uses like 5%, it's negligible
Kinect works ok for now. It has its quirks though;
It gets confused if you cross one leg in front of the other and starts doing weird shit.
It rotates your whole body slightly when you rotate your head.
It does not handle foot rotation.
A driver update coming in the next couple of weeks should alleviate these issues somewhat.
I have not noticed any signifcant overhead using the kinect.
