You gotta play a few hours before the free-roam kicks in. Also don't take the huge hits to hunger and energy during the opening as representative of the whole game. Managing sleep and food is pretty easy.

So I can play differently, make different choices in quests?

mainly because I used the dev cheat chest plate armor early and it has made the game far too easy now that I'm at least proficient in combat.

I'm afraid to start any side quests because I heard that some of them are timed. I'm finding that early in the game I can't actually complete a lot of the side quests, and I don't know if I can complete it or not until I start it, at which point a quest timer starts.

You're gonna hit that point legitimately anyway. I reduced my armor to pic related and it's a lot better. I'm thinking about adding a mod to reduce strength scaling, too.

These stew pots that are spread around everywhere kinda destroy the whole need to bring food/eat.
You get +25 Nourishment from eating from them and it's not considered illegal even though you just walked up to someone else's stew and ate from it. They should either not exist at all or be be pay2eat.

You aren't wrong about tights. The feminine silhouette comes from faulds, narrow waists and curvaceous breastplates. Especially the faulds. Minimizing the legs so the chest looks bigger is a masculine shape, but wearing a skirt (even an armored one) sorta fucks that up.

Clinch Master is good. Sometimes fights indoors or just in tight areas lead to a bunch of clinches and it's good to win more of them. Head-cracker is fun.

So I asked the other day how I get to fight the Sasau fistfighters, and I was told that I had to get the quest to do so from the tanner (I think). I tried that today, but other than the option to trade with his wife, I didn't see any dialogue to ask about it. Did I do something wrong, or are there prerequisites you need to finish first? I've already completed the main story and all of the side quests that I know of that aren't bugged and impossible to complete.

Any advice would be appreciated.

From my experience with it you can pick it up, but not put it in your inventory. I havent bought one so I dont know how that works. Large two handed weapons are pick up only for me though. Anyone know why?

I think all polearms are OP by design in this game, like in real life. That's the reason they were made it so that you can't keep them in your inventory without mods.
