It seems like the triggers for some of those events are bugged. I frequently get to the person and talk to them and the others don't attack at all, they just crouch there waiting.

I didn't dare overburden myself since I just knew there was going to be some timed/urgent shit that would be foisted onto me in the middle of gathering. Not like it really matters since I already have basically the best armor in the game and 16k groschen.

Yep, all loot from non-hostile NPCs will be marked as stolen.
That means all NPCs not programmed to attack you unless you attack them first. Which besides the obvious includes:
>Bandits / Cumans that spawn already surrendering in that random encounter
>Corpses from the random encounter with the looters-murderers
>That dying bandit in Ginger's quest

>dueling ota for armor e-peen quest
>guards arrest me for crippling someone
