None, there's only one expansion out right now and it's more of a DLC, adding Vaulters, pirate diplomacy and a few ship modules, everything else comes with the game.

None are "must" have, but all the FLC and the two new cheap DLC are really good to have. I love the Vaulters expansion because I loved them in ES1 and EL, but you don't really need them or the little ship modules they bring until you do a few playthroughs of the other factions.

ES2 only has one major gameplay expansion and it's vaulters, which mainly adds another playable faction. I wouldn't call it 'must have' unless you like the base game and want to play as them. The content besides their addition is somewhat lacking. 2 new DLCs were released today simultaneously but both are very small. One just adds music and barely anything else. Another adds quests for each minor faction and a few new ones. Again, not 'must have', get them if you like the base game (in the case of music, if you like the songs).

AI work is extremely difficult, so Paradox really can't improve anything without hiring an extremely capable expert.
Add to that the fact that Paradox games are played by retards whose attraction to these games is their ability to outsmart the AI and you have an intractable problem that would cost an impractical amount of money to address.

I am just past 2300 in my Stellaris SP game, I want to trigger the Great Khan.
Every time I open console, type 'play 50' (the command to become one of the marauders, then type 'marauder.500' which should, according to the wiki, and everything I've read off Google, trigger the event, but all I get is 'unknown command'.
I own Apocalypse and have had the Khan spawn normally in other SP games.
That's because other games just have enemies run towards you and shoot. Strategy games are a lot harder to do AI for. Just look at chess - people have made specialized computers just for the problem of playing chess as well as a human being. There are countless research papers about this. Nobody is going to put that much work into a Paradox blobbing game.
