i've noticed the worst players (ones who have 3*'d WoL as their support, or almost no passives equipped for them, or hp attack right before the boss is about to hit them, or brave attack when they have 5000/6000 brave during chases, or are brazilian) have chosen to use these characters in coop at different points of OO's content releases: >cloud --> squall --> vaan --> tidus if this accurately describes you, make sure you're not doing any of the things i listed

They did an ability update a while ago that brought a lot of older abilities to the current standards, and right now in most cases they eclipse Burst mode commands in terms of pure damage.
To answer the question though, what you should be making depends on what you have currently and what you want to be using.
Got lucky with Knights like Orlandeau and Marche? Assault Saber is worth crafting more than one for stupid damage, and the defensive Knights love Guardbringer and Earthbringer. Wound up with some killer mages like Terra or something similar? Better hone those Chain spells. Maybe you plan to go for Yuffie or other Ninjas? I hope you've got Dark Orbs to burn because you're gonna need ALLLLLL of those Ninja skills. And even if you don't want to focus on a few classes in particular, there's a few classes that are worth crafting in general, like most of the high level Cure spells, the Breakdowns from Support, some of the high tier Dancer skills, etc.
