First off, the Jews are getting onto you, and that means they're scattering into the woods and joining partisans which there's a fuckload of. Soldiers kill loads of people, but, here's the key thing: they're trained to do it under certain circumstances by disconnecting it from murder. It's like training a dog. You have to teach him "Don't Bark" and "Bark" at the same time, so you can turn it on and off. Humans do really badly when made to kill constantly. tl;dr in this section, your soldiers are drunk off their ass at 11 in the morning, stealing shit, and punching their officers because they hate this routine.

Every extermination option the Germans chose was hell for the victims, but physically carting people off and shooting them in a river or ditch wore down people's mental state to the point where it had to be called off to keep those performing the executions from going insane.

The Germans were shipping the victims to Poland because it was both home to the largest Jewish population in all of Europe (1 in 3 Holocaust victim were Poles) and out of the eyes and reach of the Western Allies. If the Germans had just started killing Jews in plain sight en masse in Occupied France or the Netherlands, the Allies would have been compelled to intervene (either with air strikes or even commando raids). In Occupied Poland on the other hand, it was both easier to carry out such a policy in secret (the General Government had near total control of the media) and Allied intervention was virtually impossible (Auschwitz was out of range of all but the largest British and American strategic bombers and surveillance aircraft, the other camps were completely out of range altogether).

Average life expectancy in a concentration camp (assuming you didn't get gassed on day one) was four months, even less so if you were Sonderkommando (entire units were routinely murdered and replaced with fresh "recruits" to make sure evidence of German atrocities remained a secret).
