Historia Civilis and Real Crusades history lift things straight from sources and explain them with all the academic study available, they're practically the same slideshows + narration you'd get at a college course.

and guys like Metatron, at least Metatron himself is a linguist who reads from the sources too. There's no "profession" of historian, no practice or test that makes them true professionals, anyone can study it.

Historia Civilis isn't so bad, but he does gloss over details that Classical historians still have debates over for a neat and tidy narrative. I don't really mind him, and I don't think he bothers trying to be anything he's not. RealCrusadesHistory is a different matter, as half of his videos are straight readings while the other half are readings meant to fit into a broader op-ed attack piece on liberal and modern Muslim political thought.
