The French wouldn't eat potatoes. So they starved while traditional french staple crops kept failing. Then they revolted because obviously it was the Monarchy and Aristocrats' fault.

Though like any revolution or civil war. It is the middle class trying to overthrow the ruling elite, to become the new ruling elite. The workers just get used as fodder by both sides.
