Humor me for a moment - I believe that QTUM will be seeing gains in the future, but why will that be triggered by mainnet activation (aside from FOMO)? Surely the real gains will come when people actually start using the platform, rather than simply when it goes live?

There is inherent risk of the activation going wrong. Once the activation is confirmed smooth and operational it confers stability. The people buying QTUM now are banking on everything going smoothly.
You need to exchange the QTUM for actual coins on the mainnet. That's why, I believe Bittrex will do this automatically.
