You don't. You learn to start picking up patterns and make educated guesses.

An example how you could have taken advantage of this is by setting a low buy order under a psychological barrier in case a flash crash happens (because let's face it, no one actually predicted the JP Morgan FUD would cause this so quickly), in that case you'll get a dead cat bounce after and you can sell when you're comfortable. No you won't pick out the top so either hodle until your happy, or start selling tiered sell orders, or alternatively set a stop loss 10% (or just have a mental one mind) your buy in price and just let your profits run until you hit a certain number. If you're setting there you can just raise your stop loss after certain points.

Alternatively you could look at the general trends and pick out a bottom, if you looked at every single alt coin from the summer (even ethereum and neo recently) they all went parabolic so you can try to call the bottom there around the point before liftoff happened.
