I just season my beef, and fish.
For chicken and pork I I leave them in a bath of salt and vinegar to kill potential germs.

Raw sushi grade fish is fine and plenty good for you. But completely raw chicken pork and beef will give you some serious problems eventually. For beef try doing it carpaccio or with a lime based sauce so the acid technically cooks it. Pork and poultry should be cooked though.

You need to cook both pork and chicken until they are cooked. Eventually you will get ugly parasites and they will hurt, from the pork at least, I think you get salmonella from chicken.

But fish and beef taste amazing rare (raw for fish). Though I've heard that fish can carry some nasty parasites as well but I'm not sure if that is limited to certain kinds or what kinds exactly
