Here you have a man who can lift bruce lee multiple times over, from different positions, im sure even with one arm (I don't know enough about Arnold's single handed strength).
If Arnold, for a even a split second grabbed any piece of bruce lee, and could actually lock his grasp on him.
He would man handle him, maybe Bruce could get lucky and get a kill shot, it's not impossible, but that's not his fighting style and he would probably have to use a weapon.

Bruce won a boxing tournament, without ever earning how to box and has been in street fights. This isn't the main argument why he woud win, though. In comparison to Arnie he understood the psychology of fighting.

You have to remember too that Bruce didn't have any desire to fight professionally in the first place or have a record. The only tournament he is recorded to have been in was an amateur boxing tournament in high school, in hong kong, which he won against the 3 time champion Gary Elms.
