This sounds like someone doesn't know their TDEE OP. Exactly how many calories are you eating and your height ?

You starved your body into crash mode and now that you're eating like a human being it starts packing necessary fat

You have probably damaged your metabolism, you need to introduce more food very slowly and build up else you will balloon into a fatty again.

That's an impressive amount of weight loss.

I've read former fatties need to eat slightly below 'maintenance' for maintenance. Also if you have a body fat estimate use use that to determine your maintenance cals ( tdeecalculator.net ) since it's much more accurate than just height/weight calcs.

uhm that shouldn't be possible. Did you weight yourself once naked, after eating and drinking and then again, with clothes on after a huge meal? Did you use the same scale?

You need to maintain your weight for ~6 months to get your body into homeostasis. Remember that body fat set point that landwhales like to throw around? It's a real thing, and it takes about that much time to 'reset' it. You eating at "maintenance" is actually you at a slight surplus since your body slows your metabolism to try to get back into what it thinks is normal. Also you're holding on to more water since I'm assuming you're eating more carbs than normal.

Even assuming half is water weight, you can't gain 3kg in a week. You need a calorie excess of nearly 24000 or a daily excess of nearly 3500. You can't have that excess if you think you are eating at maintenance
