Why did the South fight a war they couldn't possibly win?

Because Southerners unironically thought it was worth fighting a crippling war so that rich people could own slaves rather than pay actually workers and contribute to the economy. They also loved to eat up black culture and racemix, so there's that too.
I'm pretty sure Jefferson Davis wanted to create a "utopia" where everyone was a mulatto mongrel and they could play jungle beats while rapping about the whities in the North. I don't know why the fuck those dumb hicks hated niggers so much, yet flooded their towns with them and gave birth to mulatto children.

They fought because the election of Lincoln proved that they were powerless to preserve slavery, even if Lincoln himself stuck to his word and didn't interfere in the south. Over time, it would have been taken away from them.

As for winning, they could have won a war but not the war they fought. They were never going to be able to destroy every army the union threw at them, but they could have fought a primarily defensive war, bringing the copperheads to power in the North and obtaining foreign recognition.

The slaver aristocrats had a mindbogglingly unrealistic view of warfare and the world in general, and this including underestimating both northerners and the south's material situation to a fatal degree. Probably yeah. But the politics of the situation would have looked much worse for the north, and the south may have drawn more support from the border states.

They never intended to win the war by traditional means, i.e take over D.C/PA. But rather win through attrition. If the south simply held out long enough, the north would simply give into the confederacy's demands and thus allowing for a Independent southern America with slavery
