Why has every agricultural country based their entire economy on eating carbs? I won't start Veeky Forumsting out but eating broccoli, walnuts and some beans is way more beneficial than loading up on excessive amounts of potatoes, bread and other carbs that will only end up giving you cancer, diabetes and heart diseases.

Rice is better than potatoes, but it has more stringent terrain and climate requirements.

The easy best option however is wheat. Wheat is the king of staples and it's not close.

It's more economically viable, it fills you up more and it keeps you from starving for longer.

If said civilization is near the Equator, then corn, if its too humid/rainy then rice, if its a template region then potatoes. Pretty good crops, tho.

Walnut trees take 30-40 years to mature and are huge as fuck
Beans are allright though

The main issue is yield pr acre coupled with manhours pr ton harvested and prepared for consumption

Rice, potatoes and wheat are heavy hitters when it comes to yields and are fairly easy to turn into edible food that can be stored

Potatoes loose out due to eventual rot, whereas wheat and rice can be dry-stored for years in case of bad harvests
