500 is considered the a good start. If your TDEE is really high and cutting by 1000 would still have you eating 1200+ cals a day, you can do that. Try either one, and adjust to something that works for you. Obviously you'll lose more quickly if you go lower.

No, if you are big enough to get loose skin that's going to happen regardless. There's a thought that it might be slightly less bad if you lose weight slowly and build muscle to replace the fat, but that won't prevent it completely.

It is better to lose weight slowly because that's more sustainable. Losing weight and keeping it off is a long term commitment, trying to lose a ton of weight very quickly just means you are likely to put it back on because you haven't actually made concrete changes to help you long term.

Put lots of vegetables on the sandwhich (along with a good chunk of meat) and preferrably use whole wheat bread (more fiber) and the sandwhich will be filling as all fuck. Don't go crazy on the sauce or cheese (not saying none, just be sane) and the calories should be fine.
