I've done all of these things, im not proud of it, i was a 5'9 262lb fatty, and im still a fatty at 202lb.

eat 2800kcal/day for 4 weeks. 150g of protein, 100g of fat, all other just carbs, plenty of water and rest.
if you didnt add a few kilos in those weeks, add +500 kcal/day for the next 4 weeks. keep repeating that until you are able to gain 4-5 kilos per month

Peanut butter sandwiches take too long. My current weight gain snack is 5 slices of bread, mixed with chocolate milk (takes 30 secs to prepare, including the time to open and close the bag of bread).

other than that, are you eating enough protein? try to increase it a bit
is your fat intake low? (healthy)fats are very important, and they can mess with you. its always a good thing trying to stay stable on your fat intake, whatever you are bulking or cutting, modify carbs and not fats. (ofc stay on a healthy level of fats 70-100g)
other factors can be PROPER sleep, or your sugar intake. are both ok/your usual?

Fairly thin guy here. I can relate to this. I've noticed I'm too used to eating 3 meals a day, no matter the size, and pretty much nothing but a small bag of chips or popcorn in the afternoon. I never feel the need to eat an actual meal between the usual 3 I have every day. So, since I know I'm going to really struggle to eat more meals, I'm trying to just make sure I eat more per meal. Of course, that's not that much anyway (2 sandwiches and a cup of milk for breakfast), but it's better than milk and cereal.

The issue isn't meal timing, it's eating calorie-dense foods. You can easily reach 2500 or even 3k by applying yourself. Nuts are a godsend in this, as is oil and whole milk (though whole milk is very filling). Have some toast with peanut butter, eat a handful of mixed nuts for an easy 230 cal, grab yourself a steak and coat it with butter, have a bit of garlic bread with your spaghetti, etc.

I'm similar to you it's all about eating more, had to up my self to 3400 cals a day which I hate but I'm finally making some decent gains

I would do all of that if it weren't for my acne going crazy with fat rich foods. Butter specially. Still, I've been sucking it up lately and eating some of those things, maybe eating more won't make it much worse. I haven't tested it out yet, but it might actually been all the carbs I eat (I eat a loaf of whole wheat bread every 3 days easily). But I honestly don't know what to do to my diet to stop the acne anymore. I gave up eating chocolate, peanuts, butter, and milk altogether for a few months and that didn't get rid of it completely, and I don't think I could afford getting rid of carbs.
