Depends on the job.
Sometimes it's just machine work with some manual grinding and then installation at the site, sometimes just the latter or just the former, sometimes carving with tools or old-school carving with hammer and chisel, sometimes just shaping stone for use in construction and helping on-site, etc.
Anything to do with shaping stone that a client demands really, or sometimes I'm just in the factory or workshop doing a small part of a larger job.

Starting earlier just means you have more time to "make it" while in your 20s or 30s if you want to use it to get laid or get recognised while you're young or something.
Unless it's nurtured from very early the age you start has fuck all to do with potential skill really, go for it.
Make sure it's an instrument you're passionate about though, guitar might just seem like the most immediate choice and might not be something you'll get long-term fulfillment from.
