I just toss a frozen breast or two in the oven wrapped in foil with some olive oil for an hour. Not the fastest but it's easy and works for me.

brined chicken is amazing, just brine it whenever you buy it and cook it all up and have some tasty protein in the fridge ready to eat.
How long can you store cooked chicken in the fridge before it goes bad? I like to cook on Monday and Friday but I'm scared of 4 day old chicken.
