I just worry about that merc. How much of an actual danger is this?
Only large fish far up the food chain are high in mercury(sharks, tuna, swordies, etc.). Sardines contain a completely negligible amount of mercury. Unless you eat the same amount of sardine as an ocean superpredator.
Not dangerous at all. Sardines and other small fish will only contain trace amounts.

i've got some fuckers sitting in mustard sauce in my pantry that are about to learn a dirty lesson about being tiny, defenseless, headless fish.
Got a bread machine, make dense hardy seed breads. Put the fish on the bread and let the oil soak in, add onions, cracked pepper & salt and fresh spinach.
It is so delicious.
