XRP is a token that can run on the Ripple network.
Thing is the Ripple network doesnt need to use XRP... so only 1 bank that went in on Ripple actually uses it, while the rest use the IOU system which works just as well but they dont have to worry about the coins price movement.

XLM is NEEDED for the transaction with Stellar Lumens.

Both are good projects objectively, but XRP will stay sort of tiny since its not actually needed.

I'm sold on XLM being better than XRP at least. But considering how important privacy is in banking and finance I don't really believe in XLM itself unless it can be implemented at a later stage

The customer never touches the coin for their transaction.
They have funds, and at the time they spend some or send them to another person, the bank then uses those funds to get XLM which is then sent to another bank which turns it back into Fiat.
Actually for the bank side, the option of less privacy is a good one for tracking money.
You do have the option or jumbling transactions though I believe (dont quote me here).
