So, I'm trying to build a Tog Gun/X-wing Books style Age of Rebellion game. But since I've only played non-space combat focused games, how do the Rebel's fighters stand up under FFG rules? Are there known resources for collective analysis of the ships in the FFG space combat system?

Yeah, so, FFG is definitely written with the scene where TIEs attack the Falcon rather than, say, the Battle of Yavin in mind. Single or even double-seater fighters can easily get vaped in a single shot, and there's not much to do about that on the target end like usual in FFG, except there's no dodge or sidestep for fighters.
Easiest way is to give PC and major NPC pilots wingmen using AoR's squadron rules as bullet shields, or to use homebrew options to make certain check types contested, at least for small ships.

Played my second game of X Wing tonight, and jesus christ, this guy was really good. His mobility is so useful. Saved himself at least two times by rolling out of the way or boosting away from enemy fire arcs.

Yeah in the hands of a skilled player, Turr Phenir *CAN be just as obnoxious as Soontir Fel. His shtick however requires him to be shooting before most everyone else, and so Veteran Instincts is the top choice, especialy since he has built-in action economy. Turr is probably my favorite of te Interceptor aces, although Soontir Fel is the easiest to do well with (Push the Limit, something something Autothrusters).

Yea, rolled with a list given by Veeky Forums based on what I own, which was: Soontir Fel + PTL, Royal Guard, Targeting Computer, Shield Turr Phennir, same 2 x Epsilon Squadron Pilot
The Epsilon's went down quickly (both to some horribly planned maneuvers early on and a decked out Luke Skywalker) but both Soontir and Turr worked as a surprisingly effective pair in hunting A-Wings.

Technically the lowest value ships are 12pts. The three ships that can hit that mark, are PS 1 Tie Fighters, Academy Pilot; PS 1 Scum Z-95, Bynare Pirate; and PS 2 Rebel Z-95, Bandit Squadron.

General advice for character building is to spend the vast majority of your starting XP on Characteristics, as those are nigh-impossible to raise during the course of the game, but skills are easy to improve. If you're looking for combat focused builds you should check out the Dangerous Covenants book for ideas.

The Dengar/Scarlett Slashfic: Dengar w/ Proton Torps, Extra Munitions, Outlaw Tech, Unhinged Astromech, Punishing One, and Guidance Ships Kath Scarlett w/ Boba Fett, Homing Missiles, Slave I so I can toss extra munitions on it, and guidance chips.
First two turns are put the fish in the water, then mop up anything left.

Looks fine to me. Although I've come to prefer Dengar with R5-P8. It's a real "fuck you" to anyone shooting him.
Speaking of Dengar, how would you build him in FFG? He's insanely skilled and got some absurd cybernetics. I remember in his story from Tales of the Bounty Hunters, he was able to dodge blasters after they'd been fired and move faster than the human eye can see for short periods of time.

Everything. Pretty much the only things I don't own right now are Imperial Aces, the TIE Punisher, and the Mist Hunter.
Since you don't have adaptability you can't give it to Kyle. This list is a lot of fun, I've seen it dance around swarms and other things, it actually went to 2nd place in a recent regional.

Do a Resistance Fighters pack similar to the Scum starter set. Gives us Poe's black and orange X-Wing. Give us new X-Wing pilots like Snap Wexley and Jessika Pava. And give us Rey as a Falcon pilot with Finn as a gunner and BB-8 as crew.
Think about your character as a person/career first. Don't build into something because powers, build into something because characters!
Anons have already advised you to tap all EXP into Characteristics, as you can't increase those except by Dedications, which are on you Specialization/Talent trees, and usually well down the bottom (at least 75exp to get to one).

My character idea was a trainee soldier (probably at a local garrison somewhere) who wanted to maintain order, but gets started thinking about joining the Rebellion after hearing stuff about them from fellow trainees. They ran off to join up together, but are now mostly split up.
He feels that having a strong, controlling governing power is a good thing for the galaxy to make sure that people get access to what they need and there's no need to live in poverty, but that that many of the Empire's policies are entirely doing things the wrong way. Subverting them through the Rebellion seems like the best way to work towards creating such a society.
He's rather cold and direct about this, willing to make a few sacrifices to reach those goals. Very objective focused, not really caring about those outside his team/friends (and maybe even some team members he doesn't like) beyond a basic moral level (no unnecessary killing, no cruelty, etc). Has a morbid sense of humor which may pop up at inappropriate moments.

Awesome man. It's good you've thought a lot about this. Then look at the specs for the AoR Solider career, and think about what kind of combatant he would be.
Remember you can add any other spec at any time if you have the exp, so this is just the base class thing.
If he fights with ranged weapons, what kind? Pistols, rifles, big guns?
Does he prefer to hit and run or be the tank of the group?
Then build around these things.

Episode 1 is probably the easiest to rewrite because the structure is simple and easy to do. Like the OT, things can end bright and optimistic. The later ones, you have to show a dark slide into corruption and despair as freedom and liberty are strangled out of the Republic. You have to give credible reasons for the triumph of the emperor, the fall of the Republic, and the hunt for the Jedi.
I'm not really happy with my takes on 2 & 3 either.

Even IV had Y wings to break up the rebel fleet. The FO had the new shuttle, FO and SF fighters as well as the assault ships the stormtroopers rode in.

Fingers crossed for more starfighter variety in VIII. We know A-wings will be coming back in a live-action film at some point in the future, at least. Still holding out hopes for a nucanon StealthX, though. The technological "progress" we saw in VII seemed half-assed compared to what could have been.
