Orcs in elderscrolls are fucked. Also they aren't actively stronger than men they are just forced to live a hardier life usually involving a physical body arms race against rivals to show worth while doing some sort of intense menial labor, usually in the form of mining since malacath likes you digging in the dirt.
Short of that they just have that naturally jacked look like tyrone does where as elved get that small but chiseled frame asian bros get.

I think next time I do orcs they'll be somewhat smaller than humans but proportionally stronger, probably a mix of greys and greens, and not especially like pigs but with some other savage features. They'd be more in the vaguely-neutral barbarian-type role, with the occasional tribe under the influence of some malicious spirit(s) or just unusually cruel and marauding.

That all depends on if you ever worshiped him in the first place. Not every Orc grows up in a stronghold, you know, and a lot serve as mercenaries or in the Legion. They aren't as shitty as you've made them out to be.

Its part of his corruption deal after he ate the corpse of tinimac and in doing so gets corrupted which in turns corrupted his followers into orsimer or "pariah folk" aka orcs. He literally OWNS all orcs by virtue of being top orc and as a reality warping prick you can't topple him as he can just blink you out of existence when properly pissed off though there is hinted unwanted side effects hence why daedric princes don't often do this.

Sovngarde exist solely because nords believe in it as a thing and in doing so set the rules it was then cemented by nord saints ascending to demigod status and setting up shop. Entirely different rules and scenarios.

That doesn't mean he gets it. Daedra can't just take souls that aren't given to them. They aren't earthbones, they have no proper dominion over mundus. Malacath least of all, given how he's the second least powerful prince. The orcs were changed because they worshipped him when he changed, but their descendants are not bound to him, other than the ones that worship him still. Sort of like how Azura doesn't get every dunmer soul just because her influence turned them dark.

You do realize that aedra and daedra are the same kind of beings right? What makes a daedra a daedra is whether or not they stuck around past the mythic era and made their own realms in oblivion near Mundus. The only functionally different group were the 8 divines, who gave up their "lives" to become the earthbones, but before that they too were the same kind of being.
