Actually it does, the different societies have mostly integrated into one as a wider nation but there's still plenty of evidence for it.
The Lalafell were builders, and are now the core of trade (aka jews, hello conspiracy plots in main scenario). Roegadyn are a sailor society (Rogue class quests touch on this, as well as the divide between pirates and the Lominsan navy - on both sides it's primarily Roegadyn). Miqo'te are hunter-gatherers (for the Keepers of the Moon, talked about in some of the Archer class quests) and manly muh-honor arab samurai (for the Keepers of the Sun, main scenario arc in Southern Thanalan). Hyur are mostly immigrants from other countries (such as Doma) but seem to have no implied culture, Elezen are haughty forest elves (most quests in Gridania show how they're basically all racist assholes).
All of these races are integrated into wider Eorzean society. There are Lalafell hunter-gatherers, Elezen sailors, Miqo'te snob-archers. It doesn't really matter all that much because the different races have coexisted long enough to integrate. It's even implied that pure-blooded Garleans integrate just fine in countries they conquer, as well as people from them integrating back into Garlean society.
I don't know jack shit about the Au'ra, though. As far as I can tell they don't live outside of Ishgard and there's been no discussion in any quests I've done of their culture or origins. Pretty sure they were added just as fanservice.
I like FFXIV's setting a lot - for vidya, it's very fleshed out, including stuff you never actually see; you just have to wade through a lot of slow ass dialogue and mechanics that may not be your cup of tea to get any of it. I'd run it if my main group weren't straight-faced anti-weeb fuckers who can't even bear to hear mention of Japan as a country.
