Because Bar wënches are advertising. You have a good looking waiter, make sure she's at least willing to allow the occasional drunken grope, fondle without causing a big enough scene, and you get more customers. Drunks love pretty ladies who are nice to them.

Another campaign, my Sorceress needed funds and our less then legal career as murder-hobos wasn't really cutting it. Bar maid was the best of a limited and undesirable list of choices.
Another campaign, a Dame Knight who's aristocrat family was pretty much in name only. She would spend her life questing from town to town along the Empire's borders acting as a folk hero one day, farmhand the next.
One tavern she often stopped by at a main crossroads she would earn food and board working there for a day or two.
Now I'm playing a semi-fallen Paladin who was told by her Goddess she needed to learn some humility and perspective. She's was working as an innkeep for a short while now she's a vagrant when she had a dream she was trying to rules-lawyer the terms of her penitence to an effigy of herself. Which is largely why she needs to serve penitence in the first place.
I've worked behind a bar for over a decade, only now moving into pathology and is specifically where I met our group's DM.
I was generally just drawing on what was familiar for these escapades in game.

Hard to tell sometimes how far is too far; learning woodcarving so I could make an intricate sliding puzzle-box prop as a central MacGuffin for one campaign ended up being crazy-awesome, and really went over well with the group.
Trying to run a campaign around the idea of running a tavern-slash-inn, complete with prices for supplies and stats and payscales for hirelings and workers, um...not so much, until the whole 'organized crime' angle got added in and it became a game of The Godfather instead of Accountant: The Spreadsheeting.

Putting sexy bitches beside products is nothing new, this how advertising worked in the past too. Sex sells so your bar waitresses had to look sexy and accepting to some harmless advances to bring in those customers and make the money. Literal whores were a completely different deal. Even today prettier looking people are more desired for service jobs.

When a campaign got real and a PC she really liked almost died, the party found her completely hammered in a shady underground casino. The resultant debts didn't get in the way of the story much and actually provided some interesting diversions for a few sessions, but I don't remember much specifics as this was a while back.

This is an unpopular opinion on reddit.com/r/tg, but a woman's looks are a survival mechanism and nothing else. They are comparable to a man's hand-eye coordination in that regard. A woman only needs to look pretty to bag a good provider. With Daddy State taking over the role of the provider husband, women simply have less of a need for men.
Compare, on the other hand, poor countries with limited resources. There women depend on their looks for their survival, or at the very least their access to luxury goods. Why else do you think Western men are so in love with Polish and Russian hotties? Because these countries (though this is less and less the case in Poland due to Eurobucks) don't have a state that gives away handouts. Women need to be hot to grab a good (read: resourceful) man.
The services sector is the only retail where this female instinct to look pretty and act pleasant for survival is still rewarded in a significant way. For most other women the reward is too small compared to state handouts as well as independent, non-looks related sources of income.
tl;dr: Tavern wenches are hot because their lives literally depend on it.

Not really. Most of the campaigns I've been in had PCs adventuring out of necessity, so a good source of money was never guaranteed, so we'd spend months without earning everything and when we did we'd have to spend most of it on new equipment.

Industrialisation was the primary driver for the formation of the nuclear family, as offloading the role of family caretaker to women made it possible for men to be absent from the community for lengthy periods.

On a farm, everyone works. The men do harder work and work longer than the women, because they can. The women still work, and so do the children regardless of gender. And even if they aren't working, they are still doing some form of labor, which includes cleaning and textile working; the only reason the men aren't doing it, is because they're doing the physically demanding work. And if there is no father in the picture, the mother is expected to pick up the slack.

Sure it was a hell long time ago and times changed but still most parents want their kids to work their ass of to get a degree and education because in their time they couldn't. Even tough the job opportunities are filled by either the previous generation that refuse to retire because pensions are not enough to feed a fucking dog once a day, or filled by experts from the west because globalization. Women have degrees but they are usually doing low tier office jobs that do not even require direct human interaction with customers.
