There's actually a game that heavily features organic technology; Cthulu Tech. I never played so I don't know if the game is good or not but it actually sources Guyver as a source of inspiration.
Check out the anime Genocyber, released by Manga Entertainment.

supposedly the first edition rules were a bit of a cluster-fuck
however they are supposedly working up a second edition thats at least better formatted.

Hell, in Traveller's cybernetics book they have bio-tec equivalents to most of the augmentations.
Eberron has some good organic tech coming from the Dael'kyr and their symbionts

Another awesome and fun one is Splicers. Palladium based, but with portions streamlined. Lots of bio-tech power armor and such.
If I had to guess it would be so that you could open the break with your thumb, but what do I know.
