In EDH it's basically gain an additional Sol Ring, and copy the best creature on the board. It's not terrible. Would be better at like 4-5 CMC, but it's playable.

Mash shuffling is the recommended way to shuffle sleeved cards, so literally any sleeve. For EDH I would suggest Dragonshield Mattes above everything else, they come in boxes with 100, plus a few extras, have great shuffle feel and are nigh indestructable.
Then if you wanted to get sleeve crazy you could pick up KMC Perfect Fits, which are an inner sleeve so that you can have two layers of protection with your cards (this makes them practically waterproof, there are videos of people complete submerging cards for an extended period of time with them, and cards coming out 100% dry)
Also personal opinion, double sleeved cards feel better to shuffle, as it gives you more space in between each sleeve so they slide together much easier, and you don't have corners of sleeves catching on each other. But it does make the deck quite a bit thicker, so if you have small hands it's a hard thing to accommodate.
