I already have a small Space marine army and I understand the gist of how it works. Just looking for your opinion on who to start. Price doesn't matter, so what units should I get for each race assuming I have the £50 starter pack

You should go Guard instead.

I was thinking about that, but the guys down at my local GW all play Dark Eldar/Necrons. Will Imperial Guard do good vs their moral affecting shit?

Eldar are and have always been a lot cooler than Tau.

This is just me but if a majority of people play one or 2 armies at your local store I always suggest try changing it up.

I'd say Eldar do as much damage as, if not more than, the Tau. The thing is that they're both somewhat challenging armies to play, especially as a new player and especially as a Marines player. Both are basically the opposite of the extremely well-rounded Marines. Tau units really really need plenty of support from each other in terms of overwatch and markerlights to really excel due to being mediocre troops by themselves with almost army-wide BS3, and Eldar troops are mostly so extremely specialised and fragile that misusing a squad or leaving them out in the open for any longer than absolutely necessary is basically gonna leave you with a mountain of dead elves.

With that said I'd go Eldar out of the two because I think mobility is super important and that they're cooler, but both are legitimate choices.

It's true though, without markerlight support you waste half your army's firepower, and without mobility both of these armies are dead except for maybe wraith constructs/supersuits, and die fast.

There isn't a single army in this game so strong that you can simply plonk them down on the table and instawin no matter what, except maybe extreme cases like all-Knight armies vs some guy who forgot to bring meltas.

Can you please not pick Tau or Eldar as your first army.
They have terrible and boring fluff, and one day they may be hit with bad rules by GW, then you will be stuck with a terrible army that you don't even like.

If I did go Eldar then, what units should I buy? The starter pack comes with a few bikes and leaders, but other than that nothing really

Download a codex from the 40k general, read through it, see what takes your interest.

tau and eldar both *can* make bad lists, but it is very easy to accidentally make good lists for both

Buy a start collecting box, an OSC box, and get drones for a drone net formation, combine it with the holiday tau battleforce

you get a nice variety of units and plenty of markerlights, plenty of things to benefit from the markerlights too

I agree with you, this is why I only said somewhat challenging.

It's also a pretty different army style for the user from the small Space Marine army he mentioned having to those more specialist armies. If your Tac marines are forced to fight in melee for some reason, they can easily survive for a turn or two, retreat, auto regroup, and keep fighting. If you have a squad of Fire Warriors or Guardians fighting in melee, you're going to crumple like a wet paper bag. Of course a reasonably experienced player can avoid that kinda situation, but I dunno how well a new player can.

Would someone like Imperial guard be a good race to go then, if the other two are too complex?

If you are going for competitiveness, Eldar > Tau > IG
If going for style IG > Eldar > every other faction > Tau

Reading into the Imperial Guard codex now. Where do the Imperial Guard stand in terms of competitive strength? (You've already said they are weaker than Tau/Eldar)

I'd say lower mid tier, but as an army they're diverse as fuck so that can vary.

Dude, don't base a choice that will cost that much time and money on the pick of whoever is currently on Veeky Forums.

Read up on all of them, see if you like the lore.
Play a game using proxies for each, see of you like how they play.
Get your hands on a few cheap minis of each, see if you like to paint them.

If and only if you can answer in the positive for all three, dedicate to the purchase of an army. If not, you are very likely to lose intetest quickly.

If you wanna go with Eldar id reccommend Dark Eldar. They are pretty fun

Saying that as well, if you want another move and shoot and redeploy army, Skitarii are pretty good, heavy on the machines and their AP 2 snipers are pretty fucking nasty as well, so stick two in each troop choice
Plus the Dune crawlers are pretty sick as well and add a little beefyness to a fragile army

I have a mostly skitarii admech army. Against deldar they work well if you play smart. Against necrons is a shitshow of missery.
