Biggest step I've found is making them respectful.
That alone will change like 95% of people's opinion.
One possibility: This character WAS like that, until they got their ass handed to them after diving into a fight where they were severely outnumbered and got the hint that they're not invincible.
Once someone who's practically invulnerable is taken from the brink of death and back, they begin to appreciate how the little people without such powers have to deal with things not going their way. Bonus points if the injury is serious and takes months if not years to recover from.
Assuming this character decides to grow a pair and reflect on their assholishness rather than sperg out, they come to respect

They get to reflect on, say, a villain's speech as to how selfish the hero is, or their injury causes people to speak honestly about the hero, now that he/she's off the pedestal.
If they have friends or relatives, these people will tell the hero that they don't need to fight alone or act super-tough to put on a show, and that their value doesn't come from just being a badass, but from being a good person.

I was going to post something along the lines of, "Don't make them stubborn, childish and bitchy" but this is a much better answer than what I had.
You could give an important character a lot of bad traits but as long as they show respect to the people around them, they'd probably still be likeable in their status even if they did think highly of themselves. Someone who sacrifices others in their cause would come off as doing the necessary if they mourn the losses instead of being egocentric. Someone who abuses their status or ability for personal gain but still thanks the people giving to them would be making the best of it instead of being conniving.

I think one of the main mistakes in 95% of "powerful characters" is that they are serious as fuck and don't have even a bit of self-irony which makes them extremely boring. The only thing that helps Korra is that she's a hot brown musclegirl.
A gifted teenage bender taught they will change the world and be some bad ass avatar cloistered away from society would behave exactly how Korra does. Its realistic in this sense. Aang being more humble and responsible is also a result of his air bending monastic life.

Korra had no contrast. Korra was the typical online-gamer personality, everyone worse than her was a LOL NOOB and everyone better than her made her angry. And because of author-fiat, that worked.
At the end of the first season when Korra lost most of her powers, there was never that moment of humility. For a whole season about the struggle between benders and non-benders, Korra never had a moment where she was grateful to still be a bender of the rarest type (air), still be considered a hero, and have gotten everyone out of this alive. There was never that moment of acknowledgement of "Oh, maybe I fucked up. Maybe I deserve this. Maybe those normal people who have no powers at all had a point in rallying behind Amon and Karma's a bitch." Nope, she just cried/got angry until she got her powers back via DM-fiat. Fuck all those normies who were afraid of benders opressing them or whatever, fuck having to even partially get a taste of that? Fuck actually being relateable to anyone else in the world at all.
Fuck, Korra had such shit writing. I could do multi-page thesises on each season, but I'll suffice to say they're all just as bad.

Because it sure as hell wasn't her developing any empathy for the plight of non-benders or anything (a plothook that generally gets ignored throughout the entire series despite its huge potential as a plot goldmine).
Season 2: I know I watched this season at some point, but it was so boring I literally don't remember any of it except the Wan stuff.
Season 3: Korra gets fucked up by the BBEG because she's still a stubborn idiot shonen hero. Other characters actually defeat the BBEG... which was cool, but it still doesn't mean Korra had any character development.
Season 4: SUDDENLY LESBIAN AT THE LAST EPISODE.

Shit I don't know mate, it's been a few years, so my memory is fuzzy. Wouldn't it be logical (within the context of the show) that the people/races of men descended from these strange spirits we see time and time again. Dragons are clearly fire spirits, and by some strange means, this power came to the Fire nation's "race".
That keeps to the core of the animist/spiritual themes seen in the show, and give greater importance to the Avatar, as he bridges the gap literally and spiritually.

Second season gave us Cave Johnson: Avatar Edition, and it's the only season where she recognizes that the villain has a point and actually goes through with it. Season 4 had so much potential, but they squandered it all by going down the route of "Oh, she's actually an eeeeevil dictator", just like they squandered season 1 by shitting the finale out and making Amon full of shit, a twist that everyone saw coming from miles away. That's one of the shows greatest weaknesses: The villains all kinda have a point, but in the end they are all evil enough to keep the characters from actually meaningfully questioning themselves.
Kuuvira legitimately wasn't evil at all. The other nations just got butthurt that she spec'd more resources into military research than she did. Trufax.

If they are a studiously groomed chosen-one, they'd probably be very by the book on their first time out, and slowly grow into their abilities, remaining grounded the whole time.
If they are powerful by birthright but didn't have anyone to teach them the responsibility that comes with that, they'd be petulant and impulsive, but prone to regret at their overreactions.
An older character could be cool and calculated.

The biggest problem with the story was just over pressured writers.
The original was three seasons of 20 episodes, 60 episodes total, that told ONE story.
Korra was 4 seasons that told 4 different stories and each was only 14 episodes long.
You just can't compress a show like that and still have good character development.
Generally the best media doesn't have porn because people develop an emotional rapport with it.
