Shadowing and Stab are both skills that look nice on paper, but are just kind of "eh" otherwise. Not bad skills to have to begin with as you don't have to spend a skill up on them (not that you could for Stab), but then we get to the real problem:
MA6 is awful for Shadowing, as the skill is based on the shadowing players MA value vs. the shadowed players. MA6 being completely average, the Assassin is thus really only any good at shadowing players with MA4 or less... so, Zombies, Dwarf Linemen, and Mummies. None of which typically plan on dodging like, ever.
And Stab is problematic because it fails far more often than you would think. It's typically more effective to simply block a player unless it would be difficult to or put you at a disadvantage to try it (like a block/dodge/sidestep player, or when you have a strength disadvantage). And when you stab and it fails, that means your AV7 player is now simply standing next to someone who will likely turn around and punch them on the next turn, which usually doesn't end well for the Assassin, as he doesn't start with anything useful for protecting himself like Dodge or Block. So by making the stab instead of either doing a normal block or dodging out of the TZ, you are likely giving your opponent a free shot at a fragile player. Finally, if your stab works, and even better removes a player - that's it. That's all you get. Casualties caused by stab give the stabber no SPP. So the piece you took to try and take out other fragile pieces gets no reward for it and in the end you have to feed him touchdowns and vanity passes to get anywhere.

honestly the only time stab is good is if you have multiblock on it and can get two stabs on the los. it should really give a bonus to the armor break, or you can use an extra blitz with a stab piece or something. having to not move to stab ruins it

Returning teams are allowed and there are a few teams with over 300k in tv over rookie teams, but Stunty is nice in that it's extremely easy for a team to permanently drop 100k+ tv in a single match.

Yeah that's about right, most of the interestingly designed teams are around about 50% W/L and are surrounded by overpowered or monstrously weak teams.
Except for Squig teams, they have 25% W/L and are hilarious.
